Heat the oils in a medium skillet and sauté the garlic and onions for 2 to 3 minutes. Add the arame, red pepper, sweet corn, and water. Cover and bring to a boil. Reduce the flame to medium-low and simmer about 15 minutes. Add the shoyu, cover and simmer another 5 minutes. Remove the cover, turn the flame to medium and simmer, stirring to mix until almost all cooking liquid has evaporated. Serve.

Kamut Pizza Dough

Combine yeast, oil and water in a measuring cup. Stir and let sit for 5 minutes. Place the flour and sea salt in a mixing bowl and mix thoroughly. Pour the yeast mixture over the flour and form into a ball of dough. Knead by hand for 10 minutes or place the dough in a food processor and pulse for 4 to 5 minutes to knead. Lightly oil a large mixing bowl with olive oil and place the dough in it. Cover with a damp towel and place in a warm area. Let sit for about 1 1/2 to 2 hours or until double in size. It is now ready to punch down and divide into two balls of two. Roll out the dough, roll out and place in pizza pans or on large cookie sheets. Top with your favorite toppings. Let sit 5 minutes before baking.
Yields: 2 pizza crusts - 16 pieces

Pineapple Pizza

Preheat the oven to 400°. Divide the pizza dough in half and roll out two pizza crusts. Place on two pizza pans or two large cookie sheets. Spoon an equal amount of pizza pasta sauce over each. Sprinkle on equal portions of pineapple, black olives and bonito flakes. Bonito flakes impart a flavor similar to bacon or ham. Let sit for 5 minutes. Bake for 20 to 25 minutes until slightly golden. Lightly brush the the edges of the crust with a little olive oil to slightly brown just before the pizza is done.

Combine flours and sea salt in a medium mixing bowl. Combine dry yeast, oil and warm water in a small bowl or measuring cup. Stir several seconds until yeast dissolves. Let rest for 5 minutes. Pour wet ingredients over dry ingredients and mix to form a ball of dough. Knead for 10 minutes by hand or place in a food processor and pulse frequently to form a firm ball of dough, about 4 to 5 minutes.
Lightly oil a large mixing bowl and place the dough in it. Cover with a damp cloth, place in a warm area and let rise for approximately 1 1/2 to 2 hours or until the dough doubles in size.
Preheat the oven to 400°. Divide the dough in half and roll out on a floured counter top to form 2 pizza crusts. Place the dough on pizza pans or large cookie sheets and brush each with olive oil. Add equal amounts of garlic, onions, mushrooms, green and red peppers, and olives. Sprinkle gomasio and basil over each. Allow to rest for 10 minutes.
Bake the pizzas for 25 to 30 minutes or until the crust is light brown on the bottom and crispy. Slice each pizza into 8 equal size wedges and serve.
Yields: 2 pizza pies; 16 slices

Potato Rosemary Pizza

Preheat the oven to 400°. Divide the dough into two equal size balls. Roll out on a lightly floured counter or cutting board until about 1/2" thick. Place the rolled dough on pizza pans or large cookie sheets amd let sit while you prepare the toppings.
To prepare the topping, heat the oil in a large skillet. Sauté the garlic and onions until the onions are transluscent, about 7 minutes or so. Evenly spoon the onions on top of the rolled pizza dough. Place a layer of cooked potatoes on top of the onions. Sprinkle the potatoes with salt, pepper and rosemary leaves.
Bake the pizzas for about 20 minutes or until the crust is slightly golden. When almost done, lightly brush the edges of the crust with olive oil and bake another 5 minutes until golden. Remove and slice. Sprinkle with more salt and pepper to taste, if desired.
Yields: 2 12-inch pizzas - 16 pieces
